Mango-Ginger Murabba

Ingredients:
Grated mango-1 cup
Grated Ginger- 1 cup
sugar-2 cups
Ghee

Method:
Heat a kadai.In low fire put the sugar and stir it till it becomes light brown.
add the ginger mango and stir.Add ghee if it sticks to the kadai.
Then pour it on a greased plate.
You can cut in to diamond shape or make small balls.

MANGO YAM MASIAL

INGREDIENTS:
YAM (PEEL,DICE INTO CUBES)(TURAN PIECES)
MANGO PULP-3 TABLE SPOONS
SAUNF
BAY LEAF
ONION(FINELY CUT)
SALT
TURMERIC
RED CHILLIES
MINT OR CORIANDER LEAVES
OIL
METHOD:
SOAK THE DICED YAM PIECES IN WATER ADDING TURMERIC POWDER FOR 15 MINUTES.
THEN WASH IT WELL.THIS WILL PREVENT IRRITATION OR ITCHING IF THE YAM IS FRESH.
SAUTE THE ONION,RED CHILLIES AND MINT LEAVES IN A KADAI AND GRIND TO PASTE.
BOIL OR PRESSURE COOK THE YAM PIECES AND MASH WELL.
HEAT A KADAI..ADD OIL AND FRY SAUNF,BAY LEAF AND ADD THE ONION PASTE.
THEN ADD THE YAM,POUR SOME WATER IF NECESSARY AND COOK FOR A MINUTE.
FINALLY ADD THE MANGO PULP AND SWITCH OFF THE STOVE.

BRINJAL MANGO BHAAJI

INGREDIENTS:
BRINJAL(BIG SIZE)-1
MANGO PULP OR GRATED MANGO-3TABLE SPOONS
GINGER GARLIC PASTE
CHILLY POWDER
CORIANDER SEED POWDER
SALT
ONION
OIL
METHOD:
APPLY OIL ON THE OUTSIDE OF THE BRINJAL.POKE IT IN SOME PLACES AND MICROWAVE FOR 5 MINUTES.PEEL THE OUTER SKIN AND MASH.
OR PRESSURE COOK THE BRINJAL AND MASH.
HEAT A KADAI AND PUT OIL.FRY THE ONION.ADD SALT,CHILLY POWDER,MANGO PULP,CORIANDER SEED POWDER GINGER GARLIC PASTE AND MASHED BRINJAL.ADD A CUP OF WATER AND COOK TILL THE RAW SMELL GOES.
THIS CAN BE TAKEN AS A SIDE DISH OR THE MAIN DISH FOR RICE.

Vaazhaikai(raw banana)mango podimass

Ingredients:
Raw banana-1
Grated mango-3 table spoons
green chillies
ginger pieces
curry leaves
turmeric powder
salt
mustard
urad dal

Method:
Cut the banana in to half and pressure cook.
remove the peel and mash the banana.
heat a kadai and season with mustard,urad dal and curry leaves.
Add the grated mango,turmeric powder,chilly pieces,ginger pieces and salt.
Add the banana mash and mix well.
Note:
Instead of steam cooking you can peel the banana first and the cut in to pieces.Par boil and then cook with the other ingrdients.this will be like a curry.

drumstick mango kuruma

Ingredients:
Mango pulp(unripe) -3 table spoons
coconut milk-1cup
ginger,garlic,green chillies paste
salt
Gharam masala powder
Drum sticks-5

Method:
Select the long thick drum stick variety.
Cut each into 2 bits
Pressure cook.
Scoop out the pulp using a spoon.
Mix it with mango pulp.
Heat a kadai and saute ginger garlic paste.Add gharam masala and salt.
Add the pulps.
Pour the coconut milk and cook for a minute..

Mango kaara chutney

Ingredients:
Mango(grated and sun dried)-2cups
Mustard ,fenugreek and red chillies(20
salt
lemon juice-as much required to dilute

Method:
First powder the dry roasted mustard,fenugreek and red chillies.
Add the grated and dried(it can be dried in microwave also) mango to the powder.Add salt
Grind again.
Add lemon juice and dilute this as much as you want.
Note:you can store it for months since we dont add water or oil.

Mango more(buttermilk)kuzhambu

Ingredients:
Mango pieces
red chillies
ginger
grated coconut
coconut oil
mustard
green chillies
salt
butter milk or curd(not sour)
turmeric powder curry leaves
cumin seeds
method:
Peel the mango and cut in to big cubes.Boil with little water.Add turmeric powder.Dont drain the water
Grind coconut,ginger and red chillies and mix it with butter milk.Add salt.
Add the mango pieces to this paste.
Heat a kadai and boil this kuzhambu till it bubbles.If you over heat it it willl curdle.
Season with mustard,green chillies,cumin seeds and curry leaves.
Pour 2 spoons of raw coconut oil.

Cook all the ingredients in coconut milk till the mango and pineapple pieces are cooked.
Use it as a side dish for rotis,dosas etc

Garlic mango kuzhambu

Ingredients:
Mango-cut into big cubes
Turmeric powder
thuvar dal- 1 table spoon
pepper- 2 table spoons
ginger pieces
Jaggery- 1 spoon
red chillies-8
garlic
fenugreek-1 sppon

preparation:
Heat a kadai.Put a spoon of oil and fry thuvar dal,pepper and red chillies.Add ginger pieces and garlic piecesand grind to a paste.
In the heated kadai,pour a cup of water and boil the mango pieces .Add turmeric powder.Mix it with the ground paste.Heat the kadai with gingelly oil.allow the mustard to splutter and add fenugreek.Pour the mango kuzhambu mixture and cook for 2 minutes.Add the jaggery.If it is thick you can add water.

Mangai pisaral

Ingredients:
Mango(grated)- 1cup
onion-(cut into small pieces))- 1 cup
Cucumber(grated)-1cup
Bell pepper-(cut into thin strips)-1cup
carrots(grated)-1cup
raddish(grated)-1cup
salt
sugar-1/2 spoon
fresh coriander
Mustard seeds

Preparation:
heat a kadai.Allow the mustatrd to splutter.Switch off the stove.Put all the ingredients in the kadai.Mix and remove it from the kadai.Cool.Garnish with coriander.
Note:
This is a very tasty and cool dish which can be had everyday during summer.

Mangai Koftha

Ingrdients for kofthas:
Grated mango -1cup
Besan flour - 1 cup
chilly powder 2 spoons
oil for deep frying '

preparation of mango kofthas:
Mix mango,besan flour,chilly powderand salt by adding water..Make small balls and deep fry.

Ingredients for gravy
Onion
garlic
chillies
ginger
saunf
Boiled and mashed dal- 1cup
preparation of gravy;
Heat a kadai.Add oil.fry onion,garlic,chillies,ginger pieces,saunf.Then add dal.Pour 1 cup of water and cook for 2 minutes.Add the fried mango balls.Heat for a minute and switch off the stove.

Aval manga usily

This can be taken as a light tiffin.
Ingredients;
GettiAval(rice flakes)-2 cups
Mango grated-1/2 cup
Mustard,urad dal,red chillies,green chillies,curry leaves for seasoning
oil
salt
method:
soak aval in water for 10 minutes.Squeeze out the aval.
Heat a kadai,add little oil and season mustard,urad dal,chillies,curry leaves,manga thuruval,.Add aval and mix for a minute and immediately switch off the stove.You should mix it in such away that it wouldnt stick to the kadai.
Note:you can add roasted ground nuts.

Urulaikizhangu Mangai bonda

Ingredients:
Potato-4
mango grated(3 table spoons)
green chillies
ginger pieces
curry leaves
Besan flour
oil for deep frying
salt
Method:
Boil,peeland mash the potatos.
Mix ginger pieces,chilly pieces and manga thuruvals.Make balls.
Add salt and water to besan flour.
heat the kadai
dip each ball in to the besan flour and deep fry.
Note:This is just like the regular potato bonda but we are mixing mango instead of squeezing lime.

Manga kesari

Ingredients
Kili mookku manga(grated)-1cup
sugar(powdered)-11/2 cups
cardamom powder,roasted cashews,kesari powder etc
Method
Add little water to the grated mango and microwave for 2 minutes.Add powdered sugar and mix.Microwave for a minute.Then put the rest.
Instead of using microwave oven You can pressure cook grated mango without adding water.Then add powdered sugar.
The quantity of sugar depends on how sour the mango is.You can add more if it is too sour.

Manga pongal

1.Raw mango
2.rice
3.green gram
4.ginger pieces and pepper
5.ghee
Method
Cut mango in to pieces.Boil and grind.You get mango paste.
keep the rice and green gram in a vessel and add water.mix 2 spoons of mango paste in to that and pressure cook.fry ginger and pepper in ghee and add to the pongal.
Note:Add jaggery powder to the remaining mango paste,micro wave for 2 minutes and use it as side dish.

Mango Thugaiayal

Ingredients:
1.mango
2.oil
3.urad dal
4.red chillies
5.salt
6.grated coconut or onion and garlic pieces7.mint leaves to garnish
Method:

Peel and grate mangoHeat a kadai.Add a spoon of oil.Add urad dal and red chillies.Put the grated mango and immediately switch off the stove.Add salt and grind.you can add grated coconut or onion and garlic pieces also.
Adding coriander or mint leaves while grinding will enhance the flavour.

Mangai avial

Ingredients:
1.Mango
2.vegetables(carrots,beans,pumpkin,chow chow,raw banana etc)
3.grated coconut
4.green chillies and ginger pieces
Method
Boil the vegetables.Add a pich of turmeric powder.
Grind the grated coconut,green chilly and ginger.
Peel and cut the mango in to pieces.Boil and grind the pieces.
Add the amngo paste to the coconut paste and mix it with vegetables.Add salt
Pour 2 spoons of coconut oil over avial.
